Brisket comes from the lower chest of the cow and is a muscle that is used often and contains a lot of connective tissue. Although this is what gives brisket it's wonderful flavor, it also makes it a tough cut of meat. It must be cooked low and slow to render the fat and connective tissues to yield the tender flavorful experience we all love. Our favorite way to prepare Brisket is to smoke it for 8-12 hrs. It can also be braised or roasted with great results.
